<p>Separare i petti di anatra e praticare delle incisioni a strisce incrociate sulla pelle. Iniziare la cottura in una padella antiaderente, cuocendo i petti solamente dal lato della pelle incisa. Quando quest’ultima risulterà croccante, continuare la cottura dell’anatra sulla brace prestando attenzione che si mantenga al sangue. Lasciare, quindi, riposare.</p>
<p>Preparare nel frattempo le bietoline all’olio, sbianchendo le verdure in acqua bollente per 30 secondi, raffreddarle per un minuto in acqua e ghiaccio e tamponarle con carta assorbente. Condire con olio extravergine e sale in fiocchi.</p>
<p>Per la prugna arrostita, ricavare 8 spicchi di prugna, condire con poco olio extravergine e rosolarli velocemente in una padella antiaderente. Unire, quindi, le erbette e l’olio extravergine.</p>
<p>Preparare le cipolle gratinate, tagliandole in orizzontale all’altezza di 3 centimetri e, con l’aiuto di un coppapasta da 4 centimetri, ricavarne 8 cilindri. Cuocere in forno a vapore per 12 minuti. Spennellare le 8 cipolle con il burro fuso, aggiungere le erbette tritate e il panko e gratinare in forno a 210°C per 6 minuti. Tenere, quindi, da parte.</p>

<span>It is not the classic rice salad with dozens of canned vegetables, which by the way I don&#8217;t like very much. It is an appropriate preparation for the summer season, starring one of the most loved and consumed vegetables in these months.</span></p>
<p><span>Together with the pepper I put the </span><strong><span>salmon in oil</span></strong><span> , which lately I often buy to replace the tuna. I will go against the grain, but I love almost all preserved fish: tuna, salmon, mackerel, anchovies, etc. Both for their flavor, nutritional properties, and for their practicality of use in the kitchen.</span><br />
<span>But I find that the tuna, even if in glazed fillets, is increasingly poor and disappointing. So I prefer to fall back on salmon, which is farmed and fatter, but always guarantees a minimum of quality.</span></p>
<p>In rice and pasta salads it is delicious, it goes well with various types of vegetables and with peppers I love it.<br />
So try it with this cold rice, which does not necessarily include sauces and I seasoned with simple extra virgin olive oil, salt, basil and a pinch of pepper.</p>
<h2><span>Cold rice peppers and salmon</span></h2>
<p><strong><span>Ingredients for 4 servings</span></strong></p>
<p>300 g of arborio rice<br />
250 g of salmon in oil (drained weight)<br />
2 red peppers (about 500 g)<br />
1 bunch of basil<br />
Extra virgin olive oil<br />
1 clove of garlic<br />
Salt and pepper</p>
<p><span>Boil the rice in salted water, check that it remains al dente, then drain it well. Put it flat on a large baking dish, so that it cools quickly and does not continue cooking.</span><br />
<span>Also prepare the salmon, carefully draining it from the canned oil. After that cut it into chunks.</span></p>
<p>In the meantime, wash and dry the peppers, cut them in half, remove the stalk, the seeds and the internal white parts. Cut them into strips and cut these into cubes.<br />
Pour 4 tablespoons of extra virgin olive oil into a pan, heat it and season with the sliced ​​garlic, then remove the latter.</p>
<p><span>Add the pepper cubes, salt to taste (½ teaspoon should suffice), mix and cover the pan well.</span></p>
<p><span>Cook for about 15 minutes, checking every now and then that the natural liquid of the peppers does not shrink, if necessary add a few tablespoons of water.</span><br />
<span>When cooked, turn off the heat, uncover and let it cool, then add a handful of finely chopped basil leaves.</span></p>

<p><span>There is no danger of overcooking with this gentle cooking method. The rubberiness and crumbling yolk of overripe eggs can be forgotten, not to mention the greenish ring that forms around the yolk. It is produced in overripe eggs when the hydrogen sulfide of the protein and the iron of the yolk react.</span></p>

<li>Chop the onions, chop the garlic cloves. Sauté chopped onion, garlic and chopped oil in oil for at least 10 minutes on low heat.</li>
<li>Add sugar and tomato paste, bring the sauce to a boil a quarter.</li>
<li>Add wine, fennel seeds, herbs and lemon zest. Simmer the sauce occasionally, stirring over low heat for 40-50 minutes.</li>
<li>When the sauce is thick, add salt and black pepper from the mill. (If you use fresh herbs, add them at this point.)</li>
<li>Take the sauce aside, mix in 1/2 deciliter of good virgin olive oil. Don&#8217;t cook anymore.</li>

<h2><strong>Tip!</strong></h2>
<p>Save the strains of parmesan cheese and add them to the tomato sauce with the dried herbs. The cheese gives the sauce a curdling kiss. Remove the stem from the sauce before serving.</p>
